Himizu celebrates the harmonious fusion of seemingly opposing forces: fire and water, tradition and innovation, meticulous technique and bold experimentation.

Two disciplines share the room. The robata grill — wagyu and seafood charred over binchotan. The sushi bar — sashimi and nigiri built around what arrived this morning. Every plate belongs to one of the two, or to a careful argument between them.

Himizu sources the freshest, seasonal ingredients with meticulous care and artistry, crafting unforgettable culinary experiences. The menu shrinks before it grows — fewer dishes, done well, refreshed when something better arrives.

Dining at Himizu
transcends the plate.

It's an immersive experience — the crackle of binchotan, the hand-cut nigiri arriving in pairs, the shared bottle on the counter. Tableside theater when the dish calls for it, quiet when it doesn't.
