Sushi tacos started as a staff-meal joke and ended up on the menu within a month. Crispy nori shells, a spoonful of spicy salmon tartare, eel sauce, kewpie. Built to be eaten in two bites.
We've held the line on a few things: the shell has to crackle on the first bite, the tartare has to be cut by hand the same afternoon, and the sauces stay restrained — eel sauce or kewpie, never both heavy.
